Home Made Chicken Nuggets


If you have a picky eater like my daughter sometimes you feel like all they want to eat is chicken nuggets. Well, here is a home made version that i made and fell in love with and it also got my daughters seal of approval. :]

What you Need:(adjust ingredients to meet your needs)

boneless skinless Chicken breasts, for this  i used individually wrapped pre-marinated chicken because i only need on piece at a time for feeding my toddler. If you wish feel free to marinate your chicken yourself using your marinade of choice before you make these.

Italian blend Bread crumbs(or what ever you prefer is fine), for one piece of chicken i needed almost a cup, but i like my breading extra crispy so i double dip

Eggs, amount varies by how much chicken you cook.

Preparing/cooking:
Preheat oven to 420 degrees




Cut your chicken into nugget size pieces

Once your chicken is cut dip it into your egg mixture and coat it evenly in bread crumbs, if your like me and like extra breading, repeat. 

Line your nuggets onto a baking tray and bake in the oven for 8-10mins and flip your nuggets over once. Continue baking for another 8-10 mins until chicken is cooked and outside is golden brown. 

Serve with your choice of dipping sauces. These are will please even the pickiest of eaters and you can feel better knowing you made them yourself and not a factory. Enjoy.

Rainbow Rice Sensory Play

Rainbow rice, how fun. I came across this idea on pinterest.com(my newest addiction) and decided to give it a try. 


The supplies:


Two bags of rice, i didn't have white rice so i used brown rice :]
Food coloring, liquid or gel works fine
Rubbing Alcohol 
Seven baggies


So i used about a cup and a half of rice per color and i did, RED, ORANGE, ,YELLOW, GREEN, BLUE, VIOLET but you can make more or less., i portioned out the rice into separate baggies and added about a table spoon and a half of rubbing alcohol and desired colors to the rice and sealed up the bag and shook until all the rice was saturated opened the baggies back up and let them dry. *Note, alot of food coloring may be needed for desired color. 


Lastly i spread out the rice in a large container and added some toys like a spoon with holes large enough for rice to fall through, stacking cups, ect. you could let your kiddo play with barbies in it, it doesn't matter, let those imaginations flow. :]
